The pork becomes incredibly flavorful and fork-tender after hours in the slow cooker, making it a meal everyone will love.
Ingredients
3–4 lbs (1.4–1.8 kg) country-style pork ribs
1 tablespoon olive oil (optional, for searing)
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 small onion, sliced
4 cloves garlic, minced
1 cup chicken broth
½ cup barbecue sauce
¼ cup brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1 teaspoon dried thyme
1 teaspoon dried parsley
Instructions
Season the pork ribs with salt, pepper, garlic powder, onion powder, and smoked paprika.
For extra flavor, heat olive oil in a skillet over medium-high heat and sear the ribs for 2–3 minutes per side until lightly browned. This step is optional but highly recommended.
Place the sliced onion and minced garlic in the bottom of the slow cooker.
Arrange the seasoned pork ribs on top of the onions.
In a bowl, whisk together the chicken broth, barbecue sauce, brown sugar, Worcestershire sauce, Dijon mustard, apple cider vinegar, thyme, and parsley.
Pour the sauce evenly over the ribs.
Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the pork is tender and easily pulls apart with a fork.
If you prefer a thicker sauce, remove the ribs and pour the cooking liquid into a saucepan. Simmer for 8–10 minutes, or thicken with a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water).
Return the ribs to the slow cooker or drizzle the thickened sauce over the meat before serving.
