*Description:*
This is the most moist and delicious chocolate cake ever! It is so soft, rich, and stays moist for 3 days in the fridge. My secret ingredient is hot coffee. Everyone will love it!
*Ingredients:*
*For the Cake:*
- 250g (2 cups) all-purpose flour
- 400g (2 cups) granulated sugar
- 75g (3/4 cup) unsweetened cocoa powder
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 large eggs, room temperature
- 240ml (1 cup) buttermilk
- 120ml (1/2 cup) vegetable oil
- 2 tsp vanilla extract
- 240ml (1 cup) hot strong coffee
*For the Chocolate Frosting:*
- 230g (1 cup) unsalted butter, softened
- 420g (3 1/2 cups) powdered sugar
- 75g (3/4 cup) cocoa powder
- 120ml (1/2 cup) heavy cream
- 2 tsp vanilla extract
*Instructions:*
1. Preheat your oven to 175°C (350°F). Grease and flour two 9-inch round cake pans.
2. In a big bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
3. Add eggs, buttermilk, vegetable oil, and vanilla. Beat with a mixer on medium speed for 2 minutes.
4. Pour in the hot coffee and mix slowly. The batter will be very thin, don't worry, that's normal! This makes the cake moist.
5. Pour batter equally into the two pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
6. Let cakes cool in pans for 10 minutes, then take them out and let them cool completely on a wire rack.
7. For the frosting: In a bowl, beat the butter until creamy. Add powdered sugar and cocoa powder, beat on low. Add heavy cream and vanilla, then beat on high for 3 minutes until fluffy.
8. Assemble: Put one cake layer on a plate, spread frosting on top. Add the second layer, and frost the top and sides of the whole cake.
9. Slice and enjoy! Keep leftovers in the fridge covered.
*Notes & Tips:*
- Don't overbake, or it will be dry.
- You can replace buttermilk with 1 cup milk + 1 tbsp lemon juice, let sit 5 minutes.
- The coffee flavor will NOT be tasted, it just makes the chocolate flavor stronger.
