Pineapple Glazed Pork Chops

These juicy pineapple-glazed pork chops are the perfect combination of sweet and savory. Tender, well-seasoned pork chops are seared until golden, then baked in a rich pineapple-brown sugar glaze with garlic and onions. Ingredients
4 bone-in or boneless pork chops (about 1 inch thick)
4 pineapple rings (canned or fresh)
2 tablespoons olive oil
1 small onion, finely diced
3 cloves garlic, minced
1 cup pineapple juice
¼ cup brown sugar
2 tablespoons soy sauce
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1 teaspoon smoked paprika
½ teaspoon black pepper
1 teaspoon salt
½ teaspoon garlic powder
½ teaspoon onion powder
1 tablespoon cornstarch
2 tablespoons water
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
Season the pork chops with salt, pepper, paprika, garlic powder, and onion powder.
Heat olive oil in a large skillet over medium-high heat. Sear the pork chops for 3–4 minutes per side until golden brown. Transfer them to the prepared baking dish.
In the same skillet, sauté the diced onion for about 3 minutes, then add the garlic and cook for another 30 seconds.
Stir in the pineapple juice, brown sugar, soy sauce, Dijon mustard, and apple cider vinegar. Simmer for 5 minutes.
Mix the cornstarch with water and stir it into the sauce. Cook until the sauce thickens slightly.
Pour the glaze over the pork chops. Place one pineapple ring on top of each chop.
Bake uncovered for 20–25 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
Spoon the sauce over the pork chops before serving and garnish with fresh parsley.
