Ingredients
4 boneless, skinless chicken breasts
2 cups fresh pineapple chunks (or canned, drained)
2 medium zucchini, sliced
1 large red bell pepper, chopped
1 small yellow onion, sliced
2 tablespoons olive oil
3 cloves garlic, minced
¼ cup soy sauce
3 tablespoons honey
2 tablespoons pineapple juice
1 tablespoon brown sugar
1 tablespoon fresh lemon juice
1 teaspoon smoked paprika
1 teaspoon Italian seasoning
½ teaspoon garlic powder
Salt and black pepper, to taste
2 tablespoons chopped green onions
Fresh parsley (optional, for garnish)
Instructions
1. Preheat the oven to 400°F (200°C), or preheat your grill to medium-high heat.
2. Cut four large sheets of heavy-duty aluminum foil and lightly grease each with olive oil or cooking spray.
3. In a small bowl, whisk together the soy sauce, honey, pineapple juice, brown sugar, lemon juice, garlic, smoked paprika, Italian seasoning, garlic powder, salt, and black pepper.
4. Place one chicken breast in the center of each foil sheet.
5. Divide the zucchini, bell pepper, onion, and pineapple chunks evenly among the four packets, arranging them around and on top of the chicken.
6. Spoon the sauce generously over each packet, making sure the chicken and vegetables are well coated.
7. Fold the foil tightly to seal each packet, leaving a little space inside for steam to circulate.
8. Bake for 25–30 minutes, or grill for 20–25 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
9. Carefully open the foil packets, as hot steam will escape. Sprinkle with chopped green onions and fresh parsley before serving.
