Ingredients
For the Crust:
2 cups crushed digestive biscuits or graham crackers
½ cup unsalted butter, melted
2 tablespoons brown sugar
Pinch of salt
For the Filling:
24 oz (680 g) cream cheese, softened
1 cup granulated sugar
1 cup heavy cream
3 large eggs
1 teaspoon vanilla extract
½ cup pistachio paste or finely ground pistachios
½ cup chopped roasted pistachios
2 tablespoons cornstarch
For the Topping:
Whipped cream (optional)
Chopped roasted pistachios
Ground pistachios or pistachio powder
White chocolate curls (optional)
Instructions
Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
Combine the crushed biscuits, melted butter, brown sugar, and salt until the mixture resembles wet sand. Press it firmly into the bottom of the pan and bake for 10 minutes. Let it cool completely.
In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add the sugar and continue mixing until fully combined.
Mix in the pistachio paste, vanilla extract, and cornstarch. Add the eggs one at a time, mixing gently after each addition. Fold in the heavy cream until smooth, then stir in the chopped pistachios.
Pour the filling over the cooled crust and smooth the top with a spatula.
Bake for 55–65 minutes, or until the edges are set and the center has a slight wobble.
Turn off the oven, crack the door open, and allow the cheesecake to cool inside for 1 hour. This helps prevent cracks.
Refrigerate for at least 6 hours, preferably overnight, for the best texture and flavor.
Before serving, decorate with whipped cream, chopped pistachios, a sprinkle of pistachio powder, and white chocolate curls if desired.
