The Ultimate Zero-Carb Carnivore Bread

Why This Recipe Works

100% Animal-Based: Zero grains, almond flour, psyllium husk, or seed oils.
True Zero Net Carbs: High in bioavailable protein and essential fats.
Sturdy & Toastable: Slices cleanly without crumbling; ideal for burgers, sandwiches, or breakfast eggs.
Foolproof Texture: Whipped egg whites provide a light lift, while dairy proteins ensure a tender crumb.
Ingredients

6 large eggs, separated at room temperature
1/2 cup (115g) full-fat cottage cheese(or softened cream cheese)
1/4 cup (28g) unflavored egg white protein powder (or beef isolate protein powder)
1/2 tsp cream of tartar (or a pinch of fine sea salt)
1 tbsp melted butter or beef tallow(for brushing the tops)
Optional topping: 1/2 tsp crushed dehydrated pork rinds or coarse sea salt
Step-by-Step Instructions

Prep the Oven & Bakeware: Preheat your oven to 160°C (325°F). Lightly grease 4 oven-safe glass ramekins or large muffin tins with butter or beef tallow.
Whip the Whites: Add the egg whites and cream of tartar to a clean, dry mixing bowl. Beat on high speed using a stand mixer or hand mixer until stiff, glossy peaks form (about 4–5 minutes).
Blend the Base: In a separate food processor or blender, combine the egg yolks, cottage cheese, and protein powder. Blend until silky smooth with no curd lumps remaining.
Gently Fold: Add one-third of the whipped whites into the yolk mixture to lighten it. Then, gently fold the yolk mixture back into the remaining egg whites with a silicone spatula using wide, slow motions to preserve the aeration.
Portion & Top: Divide the batter evenly among the 4 prepared bowls, mounding them slightly above the rim. Sprinkle coarse salt or crushed pork rinds on top if desired.
Bake: Bake for 30 to 35 minutes until the tops rise into deep golden domes and feel springy to the touch.
Cool & Brush: Turn off the oven, crack the door open, and let the rolls rest inside for 10 minutes to prevent sudden deflation. Remove, brush the tops with melted butter, and allow them to cool on a wire rack before slicing.
Chef’s Tips for the Best Rise

Room Temperature Eggs: Cold whites take longer to whip and trap less air; warm whites produce maximum volume.
Avoid Deflation: Never open the oven door during the first 20 minutes of baking, as sudden temperature drops cause whipped egg structures to collapse.
Storage: Keep leftovers in an airtight container lined with a paper towel in the refrigerator for up to 5 days, or freeze sliced rolls for up to 2 months. Reheat in a toaster or skillet with butter.
