Slow Cooker Sausage Potatoes & Onions

A hearty, comforting slow-cooker dinner made with tender potatoes, savory smoked sausage, onions, and crispy bacon. It’s easy to prepare and perfect for a busy weeknight!
Ingredients
2½ lbs (1.1 kg) potatoes, peeled and cut into bite-sized chunks
1½ lbs smoked sausage or kielbasa, sliced into thick rounds
1 medium onion, cut into large chunks
6–8 slices bacon, cooked and crumbled
3 tbsp olive oil or melted butter
1 tsp garlic powder
1 tsp dried parsley
½ tsp dried thyme
½ tsp smoked paprika
½ tsp black pepper
½ tsp salt, or to taste
½ cup chicken broth
2 cloves garlic, minced
Instructions
Prepare the ingredients: Peel and cut the potatoes into evenly sized chunks. Slice the sausage and cut the onion into large pieces.
Add everything to the slow cooker: Place the potatoes, sausage, onion, and crumbled bacon into the slow cooker.
Make the seasoning mixture: In a small bowl, combine olive oil, garlic, garlic powder, parsley, thyme, smoked paprika, black pepper, and salt.
Season: Pour the mixture over the potatoes and sausage. Toss gently until everything is well coated.
Add the broth: Pour the chicken broth around the sides of the slow cooker.
Cook: Cover and cook on LOW for 5–6 hours or HIGH for 2½–3½ hours, until the potatoes are fork-tender.
Finish: Stir gently before serving and taste for seasoning. If you like crispy sausage and potatoes, transfer everything to a baking sheet and broil for a few minutes until golden.
🍽️ Serving Suggestion
Serve hot with a simple green salad, steamed vegetables, or warm crusty bread. A little shredded cheddar cheese on top is also delicious!
Tip: Avoid cutting the potatoes too small, otherwise they can become overly soft during the long cooking time.
