📝 Ingredients:

2 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
Wet Ingredients:
3 large eggs
1 cup sugar
¾ cup vegetable oil or melted butter

Fruits & Add-ins:
1 cup raisins
½ cup chopped dried apricots
½ cup mixed candied fruits
½ cup chopped nuts (optional)
👩🍳 Instructions:
1️⃣ Prepare the fruits
Wash and dry the raisins and dried fruits.
Chop large pieces into small cubes.
Toss the fruits with 2 tablespoons of flour (this prevents sinking).
2️⃣ Mix dry ingredients
In a bowl, sift together:
Flour
Baking powder
Baking soda
Salt
Set aside.
3️⃣ Mix wet ingredients
In another bowl, beat eggs and sugar until light and creamy.
Add oil (or melted butter) and vanilla.
Mix well.
Add milk or orange juice and stir.
4️⃣ Combine everything
Gradually add the dry mixture into the wet mixture.
Mix gently until smooth (do NOT overmix).
Fold in the floured fruits and nuts.
5️⃣ Bake the cake
Preheat oven to 170°C (340°F).
Grease and line a cake pan.
Pour batter evenly.
Bake for 50–60 minutes until a toothpick comes out clean.
6️⃣ Cooling
Let the cake cool in the pan for 15 minutes.
Transfer to a rack and cool completely before slicing.
