Beans and Ham (Old-School Comfort Food

Ingredients:
2 cups dried white beans (soaked overnight)
250–300 g smoked ham (or ham hock), chopped
1 large onion, chopped
3 cloves garlic, minced
1 carrot, sliced (optional)
1 tablespoon olive oil
Salt and black pepper to taste
½ teaspoon paprika
1 bay leaf (optional)
Water
Instructions:
Heat olive oil in a pot over medium heat.
Add the onion and cook until soft.
Stir in garlic, carrot, and ham pieces. Cook for a few minutes.
Add the soaked beans and mix well.
Add paprika, bay leaf, salt, and pepper.
Cover with water.
Simmer until beans are tender:
About 45–60 minutes in a regular pot
About 25 minutes in a pressure cooker.
Taste and adjust seasoning before serving.

Best served hot with fresh bread and a little chopped parsley on top.
