Hearty Beans with Smoked Meat Recipe

📝 Ingredients:
3 cups white beans (navy beans or cannellini), soaked overnight
2 cups smoked meat, ham hock, or smoked turkey (cut into pieces)
1 medium onion, finely chopped
3 cloves garlic, minced
2 tablespoons tomato paste
1 teaspoon salt (adjust to taste)
1 teaspoon black pepper
1 teaspoon paprika
½ teaspoon dried thyme
2 bay leaves
6 cups water or broth
2 tablespoons olive oil
👩‍🍳 Instructions:
Step 1: Soak the Beans
Wash the beans well and soak them in water overnight (or at least 8 hours). This helps them cook faster and become tender.
Step 2: Cook the Meat Base
In a large pot, heat olive oil over medium heat. Add chopped onion and cook for about 5 minutes until soft and fragrant. Add garlic and cook for 1 more minute.
Step 3: Add the Seasoning
Stir in tomato paste, paprika, thyme, salt, and black pepper. Cook for 2 minutes to release the flavors.
Step 4: Add Beans and Meat
Drain soaked beans and add them to the pot along with the smoked meat pieces. Pour in water or broth and add bay leaves.
Step 5: Slow Simmer
Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, stirring occasionally, until beans are very soft and the broth becomes thick and rich.
Step 6: Final Taste
Remove bay leaves. Taste and adjust salt and pepper if needed.
