🍒 Cherry Mash Truffles 🍫
Ingredients
For the Cherry Filling:
1 (10-ounce) jar maraschino cherries
½ cup (1 stick) unsalted butter, softened
2 cups confectioners' sugar, sifted
1 teaspoon pure vanilla extract
For the Chocolate Coating:
2 cups semi-sweet or milk chocolate chips
1 tablespoon coconut oil or vegetable shortening
Instructions:
Prepare the Cherries: Drain the maraschino cherries thoroughly in a colander. Place them on a cutting board and chop them finely. Transfer the chopped cherries to a clean kitchen towel or a double layer of paper towels, fold the towel over them, and press firmly to absorb as much excess moisture as possible. This step is crucial for a firm, non-sticky filling.
Make the Filling: In a large mixing bowl, use an electric hand mixer or a stand mixer fitted with the paddle attachment to beat the softened butter on medium speed until it is pale and creamy, about 1-2 minutes. Gradually add the sifted confectioners' sugar, about ½ cup at a time, beating well after each addition until the mixture is smooth. Mix in the vanilla extract. Finally, add the thoroughly dried, chopped cherries and fold them in with a spatula until they are evenly distributed throughout the filling.
Shape and Chill: Line a baking sheet with parchment paper. Scoop out approximately 1 tablespoon of the cherry filling and roll it gently between your palms to form a smooth ball. Place it on the prepared baking sheet. Repeat with the remaining filling. Place the baking sheet in the freezer and chill for 20-30 minutes, or until the balls are firm to the touch.
Melt the Chocolate: Place the chocolate chips and the coconut oil (if using) in a microwave-safe bowl. Microwave in 30-second increments, stirring vigorously with a dry spoon after each interval, until the chocolate is completely melted, smooth, and glossy. Be careful not to overheat.
Dip the Truffles: Remove the firm cherry balls from the freezer. Using a fork or a chocolate dipping tool, gently lower one ball at a time into the melted chocolate. Turn it to coat completely. Lift it out, allowing any excess chocolate to drip back into the bowl. Carefully place the coated truffle back onto the parchment-lined baking sheet. Repeat until all balls are coated.
Set and Serve: Refrigerate the baking sheet of truffles for 15-20 minutes, or until the chocolate coating is completely firm and set. For the best texture, serve the truffles chilled, or let them sit at room temperature for a few minutes for a softer, melt-in-your-mouth experience.
Storage: Store any leftover truffles in an airtight container in the refrigerator for up to one week. Place parchment paper between layers if stacking.
