1 unbaked 9-inch pie crust (store-bought or homemade)
For the filling:
1 cup quick oats
¾ cup boiling water
½ cup unsalted butter, melted
1 cup brown sugar (packed)
½ cup white sugar
2 large eggs
1 tablespoon corn syrup (optional, for extra gooey texture)
1 teaspoon vanilla extract
½ teaspoon cinnamon
¼ teaspoon salt

Step 1: Prepare the oats
Place oats in a bowl.
Pour boiling water over them.
Let sit for 10 minutes until soft and slightly thick.
Step 2: Make the filling
In a large bowl, whisk melted butter, brown sugar, and white sugar.
Add eggs and mix until smooth.
Stir in vanilla, cinnamon, salt, and corn syrup.
Add softened oats and mix well.
Step 3: Assemble the pie
Preheat oven to 350°F (175°C).
Pour the filling into the unbaked pie crust.
Spread evenly.
Step 4: Bake
Bake for 45–55 minutes until the center is set and the top is golden.
Let cool completely so the filling thickens.
