WHISKEY BACON JAM

Ingredients:

• 1 lb bacon, diced
• 2 large onions, thinly sliced
• 3 cloves garlic, minced
• ¼ cup brown sugar
• 3 tbsp whiskey or bourbon
• 2 tbsp maple syrup
• 2 tbsp balsamic vinegar
• 1 tsp black pepper
• ¼ tsp cayenne pepper
• ¼ cup water
Instructions:

1. In a large skillet, cook bacon over medium heat until crispy.
2. Remove bacon with slotted spoon, reserving 2 tablespoons of bacon fat in pan.

3. Add onions to the pan and cook over medium-low heat until caramelized, about 20-25 minutes.
4. Add garlic and cook for 1 minute until fragrant.

5. Return bacon to pan and add brown sugar, whiskey, maple syrup, balsamic vinegar, and seasonings.
6. Add water and simmer until mixture thickens, about 10-15 minutes.
7. Let cool slightly, then pulse in food processor to desired consistency.
8. Allow to cool completely before transferring to jars.

9. Perfect for burgers, grilled cheese sandwiches, crackers with cheese, or roasted meats.
10. Store in refrigerator for up to 2 weeks.
