Spicy Jalapeño Popper Soup with Grilled Cheese Dippers

Ingredients

For the Soup:

• 6 slices bacon, chopped
• 1 small onion, diced
• 4–5 jalapeños, seeded & chopped
• 3 cloves garlic, minced
• 4 cups chicken broth
• 8 oz cream cheese, cubed
• 1 cup heavy cream
• 2 cups shredded cheddar
• ½ tsp smoked paprika
• Salt & pepper to taste
• Chives or green onions (for topping)

For the Dippers:

• 8 slices bread (sourdough or your fave)
• 2 cups shredded cheddar
• 4 tbsp softened butter

How To Make It:

1. Bacon Magic: In a big pot, cook bacon until crispy. Scoop it out and leave a little grease behind.
2. Flavor Base: Toss in onion and jalapeños—sauté until tender. Add garlic and let it sizzle!
3. Build the Soup: Pour in broth and simmer. Melt in cream cheese until silky.

4. Make It Rich: Stir in cream, cheddar, paprika, salt, and pepper. Let it get super creamy.
5. Grilled Cheese Time:

Butter your bread, stuff with cheese, grill until golden. Slice into strips.
6. Serve & Devour: Top soup with bacon and chives. Dunk those dippers like there’s no tomorrow!
