Mexican Shrimp Cocktail Recipe

(Ceviche-Style)

Ingredients:

1. 1 pound medium shrimp, raw or cooked
2. Kosher salt
3. 1 cup chopped red onion
4. 1 cup peeled, diced cucumber
5. ½ cup chopped celery
6. 1 jalapeño, minced
7. 1/2 cup freshly squeezed lime juice
8. 1/4 cup chopped fresh cilantro
9. 1 avocado, diced (optional)
10. Salt and pepper, to taste

Instructions:

1. If using raw shrimp, peel and de-vein them. Rinse under cold water, pat dry, and set aside.

2. In a large bowl, combine chopped onion, cucumber, celery, and jalapeño.
3. Add the shrimp to the bowl and pour lime juice over them.

4. Stir gently to combine, cover, and refrigerate for at least 30 minutes to allow the flavors to meld.
5. Just before serving, stir in chopped cilantro and diced avocado (if using).
6. Season with salt and pepper to taste.
7. Serve chilled, garnished with additional cilantro, onion, or lime wedges, if desired.

Tips:

- Use fresh, sustainable shrimp for the best flavor and texture.
- Adjust the level of heat to your liking by using more or less jalapeño.
- For a more intense flavor, marinate the shrimp mixture for a few hours or overnight.
- Serve with tortilla chips, tostadas, or as a topping for tacos or grilled meats.
