Classic Macaroni Salad

Ingredients:

2 cups elbow macaroni (cooked and cooled)

1 cup mayonnaise

1 tbsp yellow mustard

1 tbsp vinegar (white or apple cider)

1 tsp sugar

Salt & pepper to taste

1/2 cup diced celery

1/2 cup diced red bell pepper

1/4 cup finely chopped red onion

2 boiled eggs, chopped (optional)

1/2 cup shredded carrot (optional)

Paprika or parsley for garnish

Instructions:

1. Cook macaroni according to package directions. Drain and rinse under cold water. Let cool.

2. In a large bowl, mix mayo, mustard, vinegar, sugar, salt, and pepper.

3. Stir in the macaroni, celery, bell pepper, onion, eggs, and carrot.

4. Mix well until evenly coated.

5. Chill for at least 1 hour before serving.

6. Garnish with a sprinkle of paprika or parsley.
