Ingredients:
1 pound large shrimp, peeled and deveined
1/2 cup soy sauce
1/4 cup honey
1/4 cup pineapple juice
3 cloves garlic, minced
1 tablespoon ginger, grated
1 red bell pepper, cut into chunks
1 green bell pepper, cut into chunks
1 red onion, cut into chunks
1 cup pineapple chunks
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper

Directions:
In a bowl, whisk together soy sauce, honey, pineapple juice, garlic, and ginger. Add the shrimp and marinate for 30 minutes.
Preheat the grill to medium-high heat.
Thread the shrimp, bell peppers, onion, and pineapple onto the skewers, alternating ingredients.
Brush the kabobs with olive oil and season with salt and pepper.
Grill the kabobs for 2-3 minutes per side, until the shrimp are cooked through and the vegetables are slightly charred.
Serve immediately, garnished with extra pineapple chunks if desired.
