Easter Jello Cookies

Ingredients:

1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 ¾ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
4 (3 oz) boxes Jell-O (strawberry, lemon, lime, and berry blue)
Extra granulated sugar (for rolling)

Directions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, beat butter and sugar until light and fluffy. Add egg and vanilla, mixing until combined.
In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to wet ingredients.

Divide dough into 4 equal portions. Mix one Jell-O flavor into each portion until evenly combined.
Roll dough into small balls, then roll each ball in granulated sugar.
Place on the baking sheet, spacing 2 inches apart. Flatten slightly with a spoon or your hand.

Bake for 8-10 minutes, until edges are set but centers remain soft.
Let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Tips:

For bolder colors, add a few drops of matching food coloring to each dough portion.
