Crispy milk croquettes
FRIED MILK RECIPE
INGREDIENTS FOR TWO PEOPLE:
- seventeen fl oz milk
- sevenf oz. milk + three oz. cornflour
- peels of lemon and orange
- one cinnamon stick
- three egg yolks
- 3.5 oz. sugar
- one vanilla
- one oz. butter
- Flour
- Eggs
- 2.5 oz sugar and 1 tsp of ground cinnamon for a final coat.
- Oil
INSTRUCTIONS
STEP ONE .- At first, in a casserole over medium heat put the SEVENTEEN fl oz. of
milk. Also add the cinnamon stick, some peels of lemon and
orange (quantity to taste), the vanilla stick opened by the middle
with its seeds and butter. Let to cook until it get to boil. Then, turn
off the heat and cover the casserole. Let to infuse for about thirty
minutes.
step two - Meanwhile, in a bowl put the egg yolks and the sugar. Beat with
a whisk until the eggs skim. Then, in a glass, add the two hundred ml/seven fl
oz. of milk mixed with cornflour, beat with a fork both ingredients
until the lumps disappear. Place this mixture over eggs and sugar
mixture and beat all ingredients again to obtain a homogeneous
mass.
step three- Afterwards, retire the peels and the cinammon and vanilla
sticks from the infused milk. Cook milk over medium heat and add
the previous mixture. Stir all with the whisk for about two minutes
while we observing how the mixture begins to thicken.
step four .- Then, in a mold previously buttered put this mixture. Cover the
mold with transparent paper, the papel has to come in contact
with milk. Let to cold some minutes at room temperature. When
mixture is warm, place the mold into the frigde during a whole
night.
step five .- After that time, retire the mold from the frigde and carefully cut
the mixture into cubes for about three or five cm side. Coat each piece
of flour and beated egg and finally fry them in a plenty of oil for
about two minutes.
step six.- When pieces are browned, retire them from the oil and put
each piece in paper towel for about 2 minutes to eliminate the
excess of oil. Meanwhile on a dish, put 2.5 oz. of sugar and a
teaspoon of ground cinnamon. Finally, mix all ingredients and coat
each piece with them. Serve on a dish.
