Chocolate Protein Mousse Snack Box
Ingredients (Makes 3 servings)
For the Chocolate Protein Mousse:
1 cup Greek yogurt (plain, unsweetened)
2 tbsp unsweetened cocoa powder
2 tbsp sugar-free sweetener (like stevia or monk fruit)
1/2 tsp vanilla extract
1 scoop chocolate protein powder (optional for extra protein)
2 tbsp almond milk (if needed for smoother consistency)
Other Ingredients:
18 mini rice cakes (6 per serving)
1.5 cups fresh strawberries, sliced
3 whole strawberries for garnish
Instructions
1. Make the Chocolate Protein Mousse:
In a bowl, mix Greek yogurt, cocoa powder, sweetener, vanilla extract, and protein powder (if using).
Stir well until smooth and creamy. Add a little almond milk if it's too thick.
2. Assemble the Snack Boxes:
Divide the chocolate mousse into three small containers. Garnish with a whole strawberry on top.
Arrange 6 mini rice cakes in each section.
Add sliced strawberries to the last section.
3. Store & Serve:
Keep the snack boxes in the fridge until ready to eat. Enjoy chilled!
