Cheese, Potato & Smoked Sausage Casserole
Ingredients:
- three c Idaho potatoes, peel, boiled, & diced while cool, approx 1 pound
- four tablespoons butter
- four tablespoons of flour
- two cups of milk
- half teaspoon salt
- 1/4 teaspoon pepper
- half cup shredded sharp cheddar cheese
- one pound smoked sausage
- 1/8 tsp paprika
Methods
Cut skinless smoked sausage in half, lengthwise, then cut into half-inch radius pieces. Cook in a cast iron skillet for about fifteen minutes, stirring frequently, to brown slightly.
Meanwhile, place cooked and diced potatoes into a two-quart saucepan. Adding cooked meat & stir gently.
Mix all remaining ingredients (except for the shredded cheddar cheese and paprika) in a saucepan over medium heat until warm, melted, and smooth. (Use a whisk and stir constantly).
Pour the white cheese sauce over the potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, then evenly sprinkle paprika on top.
Bake in a preheated three hundred fifty °F oven for thirty -forty five minutes (watching, until golden brown on top).
