Ingredients:

1. 1 cup diced fresh tomatoes (or 2 cups of canned crushed tomatoes)
2. 1/2 cup diced red onion
3. 1/4 cup diced fresh cilantro
4. 1 jalapeño pepper, seeded and finely chopped
5. 1 lime, juiced
6. 2 cloves garlic, minced
7. 1 teaspoon salt
8. 1/4 teaspoon black pepper

Optional ingredients:

1. 1 diced mango or pineapple for a sweet twist
2. 1 diced avocado for added creaminess
3. 1/4 cup chopped fresh parsley for added freshness

Instructions:

1. In a blender or food processor, combine diced tomatoes, red onion, cilantro, jalapeño pepper, lime juice, garlic, salt, and black pepper.
2. Blend until coarsely chopped, leaving some texture.
3. Taste and adjust seasoning if needed.
