Barrel cracker chicken and homemade dumplings
Ingredients:
  • one chicken (3-6 lbs.) fried (a whole chicken will do)
  • two L water
  • two t salt
  • half t pepper (I use coarse ground and double it up)
  • two c all-purpose flour
  • half t baking soda
  • half t salt
instructions:
Put the chicken in a Dutch oven. Add water and 2 teaspoons salt. The mixture is boiled.
Cover, reduce heat, and simmer for 1 hour or until tender (the bone should almost fall off).
Removing chicken from the broth & leave to cool. Bone the chicken and cut the meat into small pieces.
Boil the broth and add the pepper.
Mix the flour with baking soda and salt. Cut the ghee. Add the curd, stirring with a fork until moistened.
Knead the dough 4 to 5 times (it's never cooked through), letting it into 1/2-inch pieces and dropping it into the simmering broth (I don't press it, just pinch the pieces).  Reduce the heat to medium-low, and let it cook for 8 to 10 minutes, stirring occasionally. Chicken heart and feet. I make it in a pressure cooker much faster and easier.
I only press it for 30 minutes.
This can also be done in a cooking pot with 3-4 cups of water but someone has this book so at this time I can't give times to cook.
