Ingredients:

For the Pork Chops:

1. 4 boneless pork chops
2. 1/3 cup honey
3. 1/4 cup soy sauce
4. 4 cloves garlic, minced
5. 1 teaspoon ginger, minced
6. Salt and pepper to taste

For the Mashed Potatoes:

1. 4 large potatoes, peeled and cubed
2. 1/2 cup milk
3. 2 tablespoons butter
4. Salt and pepper to taste
5. Chopped parsley for garnish

Instructions:

1. Preheat oven to 400°F (200°C).
2. In a small bowl, whisk together honey, soy sauce, garlic, and ginger.
3. Place the pork chops in a shallow baking dish and brush the honey garlic mixture evenly over both sides of the pork chops.

4. Season with salt and pepper to taste.
5. Bake the pork chops in the preheated oven for 20-25 minutes or until cooked through.
6. While the pork chops are baking, prepare the mashed potatoes.
7. Boil the cubed potatoes in a large pot of salted water until tender.
8. Drain the potatoes and return them to the pot.

9. Add milk, butter, salt, and pepper, and mash the potatoes with a potato masher or a fork until smooth and creamy.
10. Serve the honey garlic pork chops with the mashed potatoes and garnish with chopped parsley
